The cellar is built underground and its architectonic design combines maximum respect for the environment -it does not disturb the landscape around it- with the use of all the technical conditions of nature to favour the preparation of the best wines.
The natural temperature of the facilities does not surpass 20ºC due to its construction characteristics, even though the outdoor temperatures can reach 40ºC in summer. In winter it does not drop below 15ºC with outdoor temperatures of less than -10ºC.
It occupies a surface area of 2,000 m2 divided into: Reception area, Preparation Building, Barrel Building (200 French and American oak barrels), Bottle rack Building and other areas - shipping and warehouse.
The tanks have a hybrid shape (tapered and cylindrical) in order to favour the innovative pumping up process by means of OBI tanks with which we do not exceed 28º C in fermentation. These tanks have a capacity of 20,000 litres.
